Quick question -

Am I right in thinking there are only 2 versions of the Falcon instruction sheet.

Star Wars that came in the Empire Strikes Back box

And Return of the Jedi

But never an Empire Strikes Back version?

I've never seen an ESB headed set and I've had a quick google but just want to be sure :D

I believe you're right. The ESB set defo came with SW instructions and ROTJ instructions with the ROTJ set. Wouldn't be surprised if some overstock SW instructions made it into the ROTJ box though. Saw a photo of a (apparently) genuine childhood collection. Had a Palitoy ROTJ Falcon with ESB Palitoy poster and SW Palitoy instructions. Can't vouch for it nor that it hadn't been added to but did make me think.

correct, palitoy never released a ESB headed instruction sheet and used the SW one in the ESB boxes.

There is this one however....

Those froggies were lucky and oddly enough this one was packaged with the ESB and ROTJ French 'meccano' boxes.

That is pretty Kool 8)

Shame Palitoy didn't do the same or change the Art work on the box early in the Empire era as I think the Kenner Empire example with the Cloud City Art looks great
